Traditionally made with simple, high-quality ingredients, it embodies the spirit of Italian cuisine by balancing flavors of umami, acidity, and creaminess. Today, it is enjoyed globally, often adapted with variations like vegan or healthier versions.

Nutritional yeast is lower in calories and adds a cheesy flavor.

Capers provide a similar briny flavor without the fish.
Add 2 peeled garlic cloves to the blender.
Pour in 2 tablespoons of worcestershire sauce.
Add 2 tablespoons of dijon mustard to the blender.
Pour in 2 tablespoons of white wine vinegar.
Add the zest of 1 lemon (optional).
Squeeze in the juice of 1 lemon (just over 2 tablespoons).
Add 1/2 teaspoon of fine grind sea salt and 1/4 teaspoon of black pepper.
Crack open 2 pasteurized eggs and add the yolks to the blender, discarding the whites.
Add 2 anchovy fillets packed in oil to the blender.
Pour in 1 cup of olive oil.
Add 1 ounce of finely shredded parmesan cheese to the mixture.
Put the lid on the blender and ensure it's tight.
Blend the mixture on high until well combined.
Refrigerate the dressing for about an hour before serving to thicken it up.
