125 g cold butter

Add 250 g of plain flour to the food processor.

Add 125 g of cold butter straight from the fridge.

Pulse until the mixture resembles fine crumbs, similar to fresh breadcrumbs or ground almonds.

Add a pinch of salt to the mixture.

Add 1 tablespoon of milk to the mixture to bring the dough together.

If the dough isn't coming together, add another tablespoon of milk.

Once the mixture starts to clump, push it together with your hands to form a dough.

Handle the dough as little as possible and shape it into a disc.

Cover the dough with cling film and chill for about 30 minutes or overnight.
