1 cup unsalted butter, chilled and cubed
1/2 tsp salt
1/4 cup granulated sugar
6-8 tbsp ice water

In a large mixing bowl, combine the flour, salt, and sugar.

Add the chilled, cubed butter to the flour mixture.

Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.

Form the dough into a ball, then flatten it into a disk.

Wrap the disk in plastic wrap and refrigerate for at least 30 minutes.

Preheat your oven to 375°F (190°C).

On a lightly floured surface, roll out the dough to fit your tart or pie pan.

Transfer the rolled dough to the pan, pressing it into the edges and trimming any excess.

Prick the bottom of the pastry with a fork to prevent bubbling.
