200 g butter
400 g flour

Place 200 g of butter, 400 g of flour, and a little pinch of salt into a blender.

Blend for 15-20 seconds until you achieve a breadcrumb texture.

Transfer the mixture to a cold bowl and make a well in the center.

Incorporate just under 100 ml of water, starting with 2/3 of it.

Using your hand like a whisk, vigorously turn the pastry around to combine the butter and flour.

Add the remaining water and twist again to form a nice dough.

Gently lift out the dough and push it together, kneading lightly.

Sprinkle a little flour on the work surface and roll out the pastry gently.
