How To Make Delicious Cherry Vareniki From Scratch!

Vareniki, a traditional Ukrainian dumpling, often features sweet or savory fillings. Cherry vareniki are especially popular in summer when cherries are in season, symbolizing comfort and home-cooked meals. These delightful dumplings are enjoyed at family gatherings and festive occasions, showcasing the rich culinary heritage of Ukraine. Today, varenyky have gained popularity beyond Ukraine, appearing in various forms across Eastern Europe.

Mix room temperature milk with melted butter and 1 egg, whisk until combined.
Combine flour, salt, and baking powder in a bowl.
Gradually add the dry ingredients to the wet ingredients, mixing little by little to avoid a sticky dough.
If the dough is too liquidy, add more flour until it reaches the right consistency.
Dust the surface and knead the dough until it no longer sticks to your hands.
Cover the dough with plastic wrap or a towel and let it rest for 15-20 minutes at room temperature.
Combine sugar with thawed and drained frozen cherries to make the filling.
Dust the surface again and roll out the dough to about 1/8 inch thick.
Cut the dough into circles using a cup or cutter.
Place 2-3 cherries in the center of each circle, being careful not to overfill.
Use water to moisten the edges of the dough and seal the vareniki by pinching them closed.
Boil water in a pot and add salt.
Drop the vareniki into the boiling water in batches to prevent sticking, cooking for 2-3 minutes or until they float to the top.
Once they float, remove them with a slotted spoon and place them in a bowl.
While still hot, toss the vareniki with melted butter to coat them.
Serve warm topped with sour cream and drizzle with reserved cherry syrup, garnished with mint.
