Separate the egg yolks and whites.
Mix egg yolks with milk and vanilla extract.
Sift in flour and baking soda; mix well.
Add lemon juice and mix well.
Whip the egg whites with an electric whisk on medium high speed until dry peaks form.
Add 1/3 of the meringue to the egg yolk batter and mix well.
Pour the egg yolk mixture back into the meringue and continue to mix well.
Heat a non-stick pan on low heat and wipe with a kitchen towel dipped in cooking oil.
Add 2 tsp of water to the pan, cover, and cook on low flame for 5 minutes.
