Today, Griwech is appreciated beyond Algeria, with variations appearing in other Maghreb countries, showcasing the region's rich culinary heritage.

Mix 1/2 cup warm water with 1/2 teaspoon saffron and set aside for coloring.
In a bowl, combine 4 cups all-purpose flour, 1 tablespoon melted butter, and 1 teaspoon salt. Mix well with fingers until butter is incorporated.
Add 1 egg, 2 tablespoons vinegar, and saffron water (strained).
Add 1 teaspoon baking powder and 7 tablespoons warm milk gradually while kneading.
Cover the dough and let it rest for 15 minutes, then knead for 1-2 minutes.
Refrigerate the dough for 1 hour.
After 1 hour, cut the dough in half and cover one half to prevent drying.
Roll out the dough thinly on a floured surface, folding it in thirds and rolling it out again. Repeat with the second half of the dough.
Prepare syrup by mixing 1 cup sugar with 1/2 lemon juice and setting aside.
In a pot, dissolve 1 cup sugar in 1 cup water and bring to a boil. Boil for 5 minutes, then turn off the heat.
Combine the sugar syrup with the first syrup mixture, stirring while adding.
Boil the combined syrup for 1 minute, then add rose water or blossom water and boil for another minute.
Spread flour on the counter and roll out the dough thinly again.
Cut the dough into 7 by 6 inch pieces. Fold each piece in half, then in half again, and shape as desired.
Press the edges to seal and place on a tray, covering to prevent drying.
Heat oil in a deep pan over medium heat and fry the pieces until golden brown, ensuring they are cooked through.
Dip the fried pieces in room temperature syrup and top with sesame seeds.
