1 tbsp olive oil
1 lb Italian sausage
1 medium onion, diced
4 cloves garlic, minced
2 tbsp tomato paste
1 (28 oz) can crushed tomatoes
6 cups chicken or vegetable broth
8–10 lasagna noodles, broken into pieces
1 tsp dried oregano
2 tsp Italian seasoning
½ tsp red pepper flakes
2 bay leaves
Salt & black pepper, to taste
1 cup ricotta cheese
½ cup shredded mozzarella
¼ cup grated Parmesan
2 tbsp chopped fresh basil or parsley

Heat olive oil in a large pot over medium heat. Add sausage, breaking it apart, and cook until browned. Drain excess fat if needed.

Stir in the onion and cook for 3–4 minutes until softened. Add garlic, tomato paste, oregano, and red pepper flakes. Cook for 1 minute to 'wake up' the spices.

Add crushed tomatoes, broth, Italian seasoning, bay leaves, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.

Add broken lasagna noodles directly into the soup. Simmer until al dente (usually 12–15 minutes). Stir occasionally so the noodles don't stick to the bottom!

Ladle into bowls and top generously with the Ricotta/Mozzarella cheese mixture.
