Pat the beef brisket dry on all sides with paper towels.

Place the brisket into a very large Ziploc bag.

Add kosher salt and coarse black pepper to the bag.

Seal the bag and shake several times to massage the seasonings into the brisket.

Place the bag in the fridge for about 6 hours up to 48 hours.

After marinating, take the brisket out of the bag and let it sit at room temperature for 1 to 2 hours.

Take the lid off the Instant Pot and add a trivet if using.

Add beef broth and Liquid Smoke to the pot.

Place the brisket in the pot and add butter.

Replace the lid and ensure the switch on top is set to seal.

Press the pressure cook button and set the cook time to 1 hour and 15 minutes using the plus button.

Press start; the unit will preheat for about 15 to 20 minutes.

Once preheated, the set cook time will show on the clock and count down.

When the cook time is complete, let it naturally release for about 15 to 20 minutes.

Move the switch to vent to release any remaining pressure; wait for the PIN to drop before opening the lid.

Place the brisket on foil or butcher paper and wrap it tightly.

Wrap the brisket in a heavy towel and place it into a cooler or insulated container to rest for 1 to 3 hours.

Slice into the brisket to check tenderness.
