Pork shoulder is generally less expensive and still provides a rich flavor.
Preheat the oven to 400°F.
Melt butter in a hot pan.
Add shredded cheese to the melted butter to create a cheese sauce.
Stir in sour cream and scallions into the cheese sauce.
Prepare shredded potatoes (cooked the day before) and butter the bottom of a baking dish.
Layer half of the shredded potatoes in the baking dish.
Pour half of the cheese sauce over the potatoes.
Add another layer of shredded potatoes on top.
Pour the remaining cheese sauce over the second layer of potatoes.
Bake in the oven at 375°F until it bubbles and turns brown, indicating it's cooked.
Prepare the Angus brisket by having a butcher trim it to your preference.
Season the brisket with salt, pepper, and garlic powder.
Roast the brisket at 400°F for a short time, then turn the oven down to 275°F and cover it.
Cook the brisket for 4 to 4.5 hours until tender.
After cooking, refrigerate the brisket overnight without the juice to make slicing easier.
Remove the brisket from the refrigerator and slice it after it has cooled.
Separate the fat from the juices before serving the brisket.
