Chop carrots, potato, and onion.

Add chopped vegetables to a stockpot.

Cover the vegetables with 4 cups of vegetable stock.

Season with salt and pepper.

Add 1 teaspoon of cumin and 1 teaspoon of curry powder; mix well.

Cover the pot and bring to a simmer.

Cook for 30 to 40 minutes until the vegetables are soft.

Use an immersion blender to blend the soup until smooth.
