Heat olive oil in a pan in medium to high heat and brown the beef shanks for approximately 3 to 5 minutes per side then set aside.

In the same pan, adjust the heat to medium low, and then sauté the celery, carrots, onions and garlic together for about 5 to 7 minutes. Then add the peeled tomatoes and keep stirring occasionally for another 5 to 7 minutes.

Turn the back up to medium high, and then pour in the red wine followed by the beef stock, stirring occasionally to distribute all the flavors evenly. Bring to a simmer.

Add the beef shanks in the pan. Cover and reduce the heat to low and cook for 45 minutes to 1 hour. After that, flip the meat and continue to cook covered for another 40 minutes or until the meat is tender.

Serve in a plate and garnish with fresh parsley.
