Start by preparing the bread and let it rest and rise.

In a pan, add 3/4 cup of ponetta and a little bit of olive oil. Cook until crispy and golden, then remove from the pan.

Add more olive oil to the pan, season the wheel shanks with salt and pepper, and flour them.

Sear the wheel shanks in the pan for about 3 to 4 minutes on each side until crispy on the outside, then set aside on a plate.

In the same pan, add one medium onion, three sticks of celery, and two carrots, all finely chopped. Cook for about 7 to 10 minutes until softened.

Add fresh garlic or granulated garlic to the vegetables, along with 2-3 bay leaves.

Layer half of the cooked vegetables in the bottom of a baking pan, then place the seared wheel shanks on top.

Pour the remaining vegetables over the meat, then add a little bit of beef broth or chicken stock, and a splash of white wine.
