1

Remove the plantains from their skins and cut them into slices of 1/2 inch.

2

Put them in a pan and cook with the cinnamon stick and 2 cups of water until soft (5-10 minutes).

3

Drain the remaining water and mash the cooked plantains into a paste, then let it cool off.

4

In a clean saucepan, cook the chocolate with 1/4 cup of water until melted.

5

Add the refried black beans and mix until they form a thick paste.

6

Heat sufficient oil in a large frying pan.

7

Take a bit of plantain paste and form a thick tortilla in your hand, shaping it like a little bowl.

8

Stuff the bowl with a small amount of the chocolate/bean mixture and close it to form an egg-shaped ball.

9

Use flour if the balls are sticky to ensure all holes are filled and the filling cannot drip out.

10

Fry the plantains until they have a light golden brown color.

11

Serve plain or with honey or sugar.
