1

Start by cutting the vegetables into fairly thick slices.

2

Prepare chickpeas from a can.

3

Measure 3 tablespoons of chicken powder mix; use half for the vegetables and half for the couscous.

4

Measure 1/2 teaspoon of turmeric, 1/2 teaspoon of nutmeg, 1/2 teaspoon of cinnamon, and 1/2 teaspoon of cloves.

5

Measure 24 ounces of plain couscous and 5 chicken thighs.

6

Heat olive oil in a skillet and add chicken thighs skin down to get color.

7

While the chicken is rendering, mix half of the chicken powder mix (1.5 tablespoons) with the rest of the spices (nutmeg, cinnamon, cloves, turmeric) and set aside.

8

Once the chicken has rendered, add the butternut squash, turnip, cabbage, and lots of carrots to the skillet.

9

Sprinkle the mixed spices over the vegetables and add a little more water.

10

Add the chickpeas on top and bring to a boil, then simmer for an hour.

11

In a separate bowl, combine 24 ounces of couscous with 3 cups of water, 1.5 teaspoons of chicken powder mix, and 1 teaspoon of turmeric; mix well.

12

Let the couscous absorb the liquid for 5 minutes after mixing.

13

Add a little olive oil to the couscous and fluff with a fork after it sits.

14

Rub some clarified butter (smen) in your hands and mix it into the couscous to make it fluffy and tasty.

15

After an hour, check the vegetable mixture; it should have beautiful colors and an amazing smell.

16

Plate the couscous in the center of the serving dish.
