Mix 3 cups of whole milk and 1 cup of evaporated milk in a saucepan.
Add 1 cinnamon stick and lemon zest to the milk mixture.
Heat the milk mixture over medium-high heat for a few minutes to release the flavors from the cinnamon and lemon.
Remove the cinnamon stick and lemon zest from the milk mixture once heated.
In a separate bowl, mix 5 tablespoons of cornstarch with a little bit of the heated milk to create a slurry.
Add 5 egg yolks to the slurry gradually to temper the eggs, ensuring not to scramble them.
Combine the egg mixture back into the saucepan with the remaining milk mixture.
Cook the mixture over medium heat for about 8 minutes, stirring continuously until it thickens and coats the back of a spoon.
Once thickened, remove from heat and stir in 1 teaspoon of vanilla extract.
