Peel the skin off a lemon using a peeler.
In a wide saucepan, combine 750 ml of milk, the lemon peel, a cinnamon stick, and a splash of vanilla extract.
Bring the mixture to a gentle boil for 5 minutes.
Remove from heat after 5 minutes.
In a separate bowl, mix 5 large egg yolks with 200 g of sugar until smooth.
Slowly add the prepared milk mixture to the egg yolk mixture while continuously stirring to temper the eggs.
Transfer the mixture to a double boiler (baño maría) over medium heat.
Stir continuously, ensuring to scrape the sides and bottom, until the foam from the egg yolks dissipates and the mixture thickens.
Remove from heat and let it cool slightly to prevent a skin from forming on top.
Pour the mixture into serving dishes.
Refrigerate for at least 2 hours until chilled and set.
Optionally, sprinkle cinnamon on top before serving.
