Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
Add vanilla, cinnamon, and lemon zest, stirring to combine.
Remove from heat and pour the custard into individual serving dishes.
Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
Chill in the refrigerator for at least 2 hours before serving.
Serve chilled, optionally garnished with a sprinkle of cinnamon.
