مخبوزات للمدارس هي وجبة خفيفة شهيرة في مصر، تُعدّ مثالية لتناولها في المدارس أو كوجبة خفيفة في المنزل. غالبًا ما تحتوي على حشوات متنوعة مثل الجبن أو السبانخ أو اللحم المفروم، مما يجعلها خيارًا مغذيًا ومشبعًا. تُعتبر هذه المخبوزات جزءًا من التراث الغذائي المصري، وقد تمثل أيضًا ذكريات الطفولة للكثيرين. في الوقت الحاضر، تُعدّ هذه المخبوزات خيارًا شائعًا في المدارس، حيث تُفضل الأمهات تحضيرها في المنزل لضمان مكوناتها الصحية.

Tofu is a protein-rich alternative, while canned veggies are cost-effective.
Start by mixing 200 ml of room temperature milk with 60 g of sugar and 10 g of instant yeast in a bowl.
Stir the mixture until the sugar and yeast dissolve and bubbles form on the surface, indicating the yeast is active.
Add 60 g of oil to the mixture and stir well.
Sift 500 g of all-purpose flour into the bowl and mix with 0.5 tsp of salt.
Knead the dough by hand or using a mixer until it absorbs the liquids, adjusting with water as needed to achieve a soft, smooth consistency.
Grease a bowl with a little oil, place the dough inside, and cover it to let it rise for about 15 minutes in warm weather or 30-60 minutes in cooler weather until doubled in size.
Divide the dough into approximately 20 small balls, greasing the baking tray lightly with oil before placing the balls on it.
Cover the dough balls with plastic wrap and a cloth to prevent them from drying out while you prepare the filling.
Prepare the filling by sautéing diced bell peppers with spices until fragrant, then let it cool before using.
Roll out each dough ball into a circle, place a spoonful of filling in the center, fold over, and seal the edges well using a fork for a decorative touch.
Let the filled pastries rise for another 15-30 minutes, depending on the room temperature.
Brush the tops with egg yolk mixed with a little milk or water and sprinkle with sesame seeds before baking.
Preheat the oven to 200-220°C and bake the pastries for 12-15 minutes until golden brown, checking for color underneath and finishing with the broiler if needed.
