1 cup water

Add 1/2 cup garlic to a pot.

Add 1 medium carrot and 1 medium tomato to the pot.

Add salt and 1 inch ginger to the pot.

Add 1 teaspoon turmeric powder and 2 cups water to the pot.

Bring to a whistle, then reduce the flame to low and cook for 5 minutes.

Turn off the flame and let it sit under pressure.

Prepare mixed vegetables: onion, beans, sweet corn, red, yellow, and green bell peppers, and carrot.

After 5 minutes, transfer the mixture to a blender and blend into a smooth paste, keeping the 2 cups of water aside.

In a separate kadhai, heat 1 tablespoon oil and add 1 teaspoon cumin seeds.

Add chopped onion and sauté until translucent, not browned.

Add beans and corn, and cook until slightly soft.

Add the remaining mixed vegetables (red, yellow, green bell peppers, and carrot) and a little salt to taste.

Mix well and cook until the vegetables are soft.

Add the blended paste to the kadhai along with the reserved water.

Add 1/2 teaspoon black pepper powder and 1/2 teaspoon chili flakes, and mix well.

Add 1 cup of water and bring to a boil, covering the pot.

Once it reaches a boil, add lemon juice and fresh coriander leaves, then mix well and turn off the flame.
