Scrub the sweet potatoes and leave the skin on.
Cut the sweet potatoes lengthways into quarters and then into wedges.
Preheat the oven to 425°F (220°C).
In a bowl, combine melted butter, salt, and nutmeg, and stir to mix.
Lightly coat a baking pan with cooking spray.
Place the sweet potato wedges in one direction on the baking pan to keep track of which side has been cooked.
Brush the butter mixture onto one side of the sweet potatoes.
Flip the sweet potatoes and brush the other side with the butter mixture.
Bake in the preheated oven for 30 minutes, flipping the sweet potatoes at the 15-minute mark.
Remove from the oven and serve as a side dish or with mayonnaise or garlic aioli.
