Preheat the oven to 425°F (220°C).
Select medium-sized sweet potatoes, about 4 to 6 inches in length.
Peel the sweet potatoes using a vegetable or potato peeler (optional).
Cut each potato in half lengthwise, then cut into long thin strips, about 1/4 to 1/2 inch wide and 1/4 inch thick.
Line a 17 by 11 inch rimmed baking sheet with parchment paper.
Add the cut sweet potatoes to the lined baking sheet.
Sprinkle 1 tablespoon of cornstarch or tapioca starch over the fries and toss until well coated.
Drizzle 2 tablespoons of oil over the potatoes and sprinkle with 1 teaspoon of salt and 1/4 teaspoon of black pepper. Toss to combine.
Spread the fries in a single layer on the baking sheet, ensuring they do not overlap.
Bake in the preheated oven for 20 minutes.
Flip the fries over and return them to the oven for an additional 12 to 15 minutes, until the edges begin to brown and crisp up.
Serve immediately for the best texture, optionally garnished with fresh parsley or cilantro and served with ketchup, mayonnaise, or Sriracha mayo.
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days. Reheat in a 325°F oven for 10 to 12 minutes.
