Make the filling by mixing blanched almonds, sugar, butter, orange blossom water, and ground cinnamon into an almond paste.
Process the almonds in a food processor until smooth, mixing manually if necessary to ensure a smooth paste.
Roll the almond paste into thin rolls.
Take three sheets of phyllo dough, brush them with melted butter, and place the almond paste into the phyllo dough.
Roll the phyllo dough over the almond paste, gently pushing the roll into the center from both edges.
Brush a round baking pan with melted butter and coil the almond rolls into a snake-like shape.
Mix water with the egg yolk and brush the top of the pastry with this mixture.
Preheat the oven to 350°F and bake for 30 to 40 minutes or until golden brown.
Warm honey and flavor it with orange blossom water to make a syrup.
Pour the honey syrup over the baked pastry and decorate with fried almonds.
