Peel the cassava and cut it into thick sticks or wedges.
Soak the cassava in water for 30 minutes to remove excess starch.
Drain the cassava and pat it dry with a kitchen towel.
Heat oil in a deep frying pan over medium heat until shimmering.
Carefully add the cassava pieces to the hot oil in batches.
Fry the cassava until golden brown and crispy, about 5-7 minutes per batch.
Remove the fried cassava with a slotted spoon and drain on paper towels.
Sprinkle salt and spices over the hot cassava while still warm.
Serve with lime juice on the side for dipping.
