Cultural Context

The Italian Beef Sandwich is a Chicago classic, originating from Italian immigrants in the early 20th century. It reflects the melding of Italian culinary traditions with American fast food culture. The sandwich is typically served with sweet or hot peppers and is often dipped in the flavorful juices from the braised beef, making it a hearty meal.

1

Toast Italian spice blend over medium heat for a couple of minutes until aromatic

2

Grind the toasted spices using a spice grinder, mortar and pestle, or blender

3

Place 8 cups of beef stock into a large pot

4

Add the bottom round beef cut into steaks

5

Add a whole head of garlic, skin on, to the pot

6

Season the liquid liberally with kosher salt

7

Pour the ground spices over the beef and mix well

8

Place the pot uncovered in a 375°F oven for 2 hours

9

Check the beef for doneness by piercing it with a knife; it should have little resistance

10

Remove the pot from the oven and let it cool at room temperature

11

Pass the cooking liquid through a fine mesh strainer to remove garlic and spice particles

12

Chill the beef in the fridge covered overnight to firm it up for slicing

13

Slice the chilled beef thinly against the grain using a sharp knife or mandolin

14

Transfer the sliced beef back into the strained cooking liquid

15

Remove excess fat from the liquid if necessary, leaving at least a quarter of it

16

Cut sweet peppers into pieces, season with salt and olive oil, and roast at 400°F for 12-15 minutes

17

Heat the beef and cooking liquid on medium until hot

18

Assemble the sandwich by placing beef in a French roll, adding jardinera and roasted peppers

19

Optionally dip the sandwich in the cooking liquid before serving
