Melt 2 tablespoons of butter over medium-high heat.
Add the onion and sauté for about 7 minutes, stirring a few times.
Add mushrooms and stir them in; sauté for about 3 to 5 minutes.
Transfer the onion and mushrooms onto a plate and keep warm with a lid over the top.
Heat 1 tablespoon of oil on medium-high heat.
Working in batches, add the skirt steak, trying not to overcrowd the skillet.
Season the steak with salt, pepper, and Montreal steak seasoning.
Cook the steak for a few minutes until browned, then remove it onto a plate and cook another batch.
Return the cooked meat back into the skillet and add provolone cheese.
Turn off the heat and stir the cheese in until it melts completely.
Cook the hoagie buns in the oven at 400 degrees for about 5 to 10 minutes.
Assemble the sandwiches by adding steak to the warm, toasty buns, then adding sautéed onion and mushrooms before closing the sandwich.
