Canola oil is more affordable and has a neutral flavor.
Wash and clean the chicken thighs.
Squeeze 1 lime over the chicken.
Add spices to the chicken (spices shown on screen).
Cut the ends of the yuca and make a slit in the skin.
Use a knife to get underneath the skin of the yuca and peel it off.
Boil the yuca until tender.
Preheat the air fryer to 400°F for 5 minutes.
Spray the air fryer basket with cooking spray.
Place the chicken thighs in the air fryer and spray the top with cooking spray.
Cook the chicken in the air fryer at 400°F for 20 minutes.
After 20 minutes, check the chicken and turn it over.
Cook for an additional 5 minutes to brown the other side of the chicken.
In a pan, add oil and sauté the sliced red onion until translucent.
Add tomato paste and salt to the onions and mix until liquidy.
