Peel and cut yuca into chunks.
Boil yuca in salted water until tender, about 20-30 minutes.
Drain yuca and let it cool slightly.

Add sliced onion, carrot, and bell pepper; sauté until softened, about 5-7 minutes.
Stir in minced garlic and cook for 1 minute until fragrant.
Add vinegar, bay leaves, black pepper, salt, cumin, and oregano; mix well.
Combine the sautéed vegetables with the boiled yuca in a large bowl.
Toss gently to coat yuca with the marinade.
Let the mixture cool to room temperature.
Chill in the refrigerator for at least 2 hours before serving.
Garnish with fresh cilantro before serving.
