Jollof Rice and Beans with Mackerel

Jollof Rice is a beloved West African dish, often served at celebrations and gatherings. In Nigeria, it's a staple at parties and family events, showcasing a rich blend of spices and flavors. The addition of beans and mackerel enhances its nutritional value, making it a complete meal. Today, Jollof Rice has gained international popularity, with variations across the region, each claiming to be the best.

Canola oil is a cost-effective alternative with a similar cooking profile.
Soak the beans in water overnight or for at least 4 hours.
Rinse the soaked beans and boil in a pot with water until tender, about 30-40 minutes.
In a separate pot, heat vegetable oil over medium heat and sauté chopped onions until translucent, about 5 minutes.
Add minced garlic and ginger, and cook for another 2 minutes until fragrant.
Blend tomatoes and bell peppers into a smooth paste and add to the pot.
Cook the tomato mixture for 10-15 minutes, stirring occasionally until it thickens.
Add chicken broth, bay leaves, thyme, curry powder, salt, and black pepper to the pot; stir well.
Incorporate the boiled beans into the tomato mixture and mix thoroughly.
Add rinsed rice to the pot and stir to combine with the sauce and beans.
Pour in enough water to cover the rice and bring to a boil.
Reduce heat to low, cover the pot, and simmer for 20-25 minutes until rice is cooked and water is absorbed.
While the rice cooks, grill or pan-fry the mackerel until cooked through and slightly crispy on the outside.
Once the rice is done, fluff it with a fork and fold in green peas and diced carrots.
Serve the jollof rice and beans topped with the grilled mackerel.
