Jollof Rice and Beans with Mackerel
Cultural Context
Jollof Rice is a beloved West African dish, often served at celebrations and gatherings. In Nigeria, it's a staple at parties and family events, showcasing a rich blend of spices and flavors. The addition of beans and mackerel enhances its nutritional value, making it a complete meal. Today, Jollof Rice has gained international popularity, with variations across the region, each claiming to be the best.

Canned tuna is often less expensive and still provides protein.

Canola oil is a cost-effective alternative with a similar cooking profile.
Wash the black-eyed peas properly under running water.
Soak the beans for over 6 hours (can soak for 8-12 hours depending on schedule).
Boil the soaked beans in a pot.
Add ground ginger to the boiling beans.
Add garlic powder to the beans.
Add water to the beans and allow it to boil.
Peel and dice the potatoes into cubes.
After boiling the beans for a while, add salt and 2 seasoning cubes.
Allow the beans to cook with more water.
Add the diced potatoes to the beans and stir.
Allow the beans and potatoes to cook properly until the beans are half done.
Debone and clean the smoked fish.
Break the smoked fish into smaller pieces.
In a pan, heat palm oil and sauté grated onions until fragrant.
Add the smoked fish to the sautéed onions and stir, allowing it to fry together.
Add 2 seasoning cubes to the fish and onion mixture and stir.
Add leftover stew (or ground pepper, habanero pepper, chili pepper) to the pan.
Add the boiled beans and potato mixture to the pan and stir thoroughly.
Ensure the beans are soft before taking it off the fire.
As you stir, the potato will start to melt into the beans, thickening the mixture.
If the beans are too thick, add water to achieve desired consistency.
