Start with 1 cup of tigernut flour.
Add 1/4 cup of collagen peptides (make sure it's grass-fed).
Add 1/4 cup of organic dried shredded coconut.
Add 1/2 cup of Love Bird cereal (unsweetened) or crushed plantain chips as a substitute.
Add 1/4 cup of pumpkin seeds or sesame seeds, or raisins/unsweetened cranberries if avoiding seeds.
Add 1/4 teaspoon of sea salt and mix everything well together using a spoon.
For the sweetener, add 1/4 cup of maple syrup. Adjust if using raisins as they add sweetness.
Add 1/4 cup of melted coconut oil and an additional 2 tablespoons of melted coconut oil, or use palm shortening instead.
Add 1/2 teaspoon of pure vanilla extract or vanilla powder.
Mix everything well until you get a doughy wet mixture.
Dump the mixture into a brownie pan lined with parchment paper and greased with the back of a measuring cup to pat it down evenly.
Place the pan in the refrigerator for a couple of hours to set.
Once set, cut into about eight equal-sized bars.
