Cube the boneless pork shoulder into 1-inch squares.
Cure the cubed pork with kosher salt and pink salt overnight in the fridge.
Grind the cured pork using a meat grinder with a coarse die.
Add ice to the ground meat to keep it cold and add moisture.
Mix the ground meat with garlic powder, mustard powder, black pepper, cayenne pepper, and paprika.
Grind the mixture again to ensure it binds well together.
