Season the fish with salt and black pepper on both sides.
Heat butter and olive oil in a large skillet over medium heat until melted and bubbling.
Add the arctic char skin-side down and cook for 4-5 minutes until the skin is crispy.
Carefully flip the fish and cook for another 3-4 minutes until cooked through and flaky.
Remove the fish from the skillet and keep warm.
In the same skillet, add shallots and garlic, sautéing until fragrant, about 2 minutes.
Deglaze the pan with white wine and simmer for 2-3 minutes until reduced by half.
Add vegetable broth, capers, and lemon juice, stirring to combine.
Return the fish to the skillet, spooning the sauce over it, and heat for an additional minute.
Garnish with fresh parsley and dill before serving.
Serve with boiled potatoes and steamed green beans.
