1

Welcome to Chop Chop Chef. Today, we're making a simple tzatziki dip.

2

Start with a nice good Greek yogurt.

3

Use a continental cucumber, peel it, and leave a little bit of the green on for contrast.

4

Cut the cucumber in half lengthwise, then cut it in half again, and scoop out the seeds with a teaspoon.

5

Grate the cucumber using a coarse blade on a vegetable grater.

6

Let the grated cucumber rest in the refrigerator to drain excess moisture.

7

In a mixing bowl, add Greek yogurt.

8

Add chopped chives and dill to the yogurt.

9

Add crushed garlic to the yogurt mixture.

10

Squeeze in some lemon juice, not more than a dash.

11

Add a dash of extra virgin olive oil and a dash of white balsamic vinegar.

12

Season with cracked salt to taste.

13

Mix all the ingredients together until well combined.

14

Squeeze out excess moisture from the grated cucumber before adding it to the mixture.

15

Fold the grated cucumber into the yogurt mixture and mix well.

16

Keep the tzatziki refrigerated as it is a dairy product.

17

When serving, drizzle a little extra olive oil on top.
