1

Warm up 1 1/2 cup milk in the microwave for 40 seconds.

2

Soften 1/3 cup butter in the microwave for 20 seconds.

3

Add butter into a medium-sized bowl and whisk.

4

Add 1 tsp salt and whisk.

5

Add 2 eggs and whisk.

6

Add warm milk and whisk.

7

Add 2 3/4 cup Wondra flour and mix with a wooden spoon until it starts to pull away from the bowl and the texture is soft.

8

Cover with a clean kitchen towel and let it rest.

9

Add warm water into a large pot, add about 4 pinches of salt, cover with a lid and bring to boil.

10

Prepare a large metal bowl with 1 Tbsp butter inside and cover with a lid.

11

Prepare a plate with a large colander on top.

12

When the water starts boiling, lower the heat to a gentle boil and remove the lid.

13

Using a small spoon (1 tsp measurement), submerge the spoon into the boiling water, scoop up the batter, and drop it into the boiling water. Repeat until the bottom is almost covered, avoiding stacking the gnocchi on top of each other.

14

Set a timer for 3 minutes. After 2 minutes, carefully scrape the bottom to loosen any gnocchi stuck to the pot.

15

After 3 minutes, scoop up the cooked gnocchi with a scooper tool and transfer to the colander.

16

Rinse the gnocchi under warm or hot water in the colander and transfer to the metal bowl with butter, swirling to coat and keep warm.

17

Repeat the cooking process for all the gnocchi, swirling them around each time to ensure they are coated with butter.
