Add 1 tbsp of oil in the pot.

Fry the spices lightly.

Stuff the chicken with a whole onion and a lemon.

Tie the chicken legs if desired.

Add 5 glasses of water for cooking the chicken.

Add powdered spices, salt, and black pepper to the pot.

Mix and leave it to boil, then reduce to low flame until chicken is cooked (about 30 minutes).

Wash the rice and soak it in cold water with 1 tsp of salt for 10 minutes.

Remove the chicken and place it in an oven tray with yellow and red food color, olive oil, and salt.

Grill the chicken in the oven for about 10 minutes.

Prepare the rice by adding 1 tbsp of oil and chopped onion to another pot, fry lightly, and add the broth from the chicken.

Add saffron, garam masala, and cardamom powder to the rice pot.

Add the soaked rice to the boiling broth, stir lightly, and cover to cook.

Add raisins to the rice, cover, and leave to steam.

Prepare charcoal to smoke the rice by placing it in a small foil bowl with oil and closing the lid.

Take the chicken out of the oven and serve it on top of the rice.
