Swamp Soup recipe

Turn on the fire and heat a big soup pot or stock pot.

Add a little olive oil and 1 lb of sliced smoked sausage to the pot.

Render the sausage until it has released some fat and is nice and toasty.

Add about 1 cup of chopped onion and 2 tablespoons of diced jalapeno to the pot and soften them.

Add 2 large or 3-4 medium diced potatoes, a pinch of salt, and some pepper to the pot.

Add a large can of seasoned turnip greens to the pot.

Add a can of Hopping John (black eyed peas with peppers and onions) to the pot. If unavailable, use 2 cans of black eyed peas instead.

Add 1 can of diced tomatoes and green chilies (Rotel) for some spice.

Pour in 2 cups of low sodium chicken broth and bring the mixture to a boil.

Cook until the potatoes are tender, about 20 minutes.
