Sweet Purple Rice with Coconut Flakes and Roasted Sesame Seed

Rinse purple rice under cold water until the water runs clear.
Soak the rice in water for at least 4 hours or overnight.
Drain the soaked rice and place it in a pot with fresh water.
Bring the water to a boil, then reduce heat to low and cover.
Cook the rice for about 30-40 minutes until tender and water is absorbed.
In a separate saucepan, heat coconut milk over medium heat.
Add sugar and salt to the coconut milk, stirring until dissolved.
Once the rice is cooked, pour the coconut mixture over the rice.
Gently fold the rice to combine with the coconut mixture.
Cover and let the rice sit for 10 minutes to absorb flavors.
Meanwhile, toast coconut flakes in a dry skillet over medium heat until golden.
In the same skillet, toast sesame seeds until fragrant.
Serve the sweet purple rice topped with toasted coconut flakes and sesame seeds.
Drizzle with vanilla extract before serving, if desired.
