Heat olive oil to at least 225 degrees Fahrenheit in a saucepan to eliminate contamination from raw ingredients
Wear two pairs of vinyl gloves when handling peppers to protect your hands
Crush the dried red chillies slightly before adding them to the jar
Add about 8 whole red chillies (seeds included) to the jar
Add a few bay leaves to the jar
Add 4 sprigs of fresh thyme to the jar
Add 2 halves of serrano peppers to the jar
Use a funnel to pour the ingredients into the jar for ease
Top off the jar with about 1 cup of heated olive oil
Do not completely clamp down the jar while the olive oil is still hot; let it cool slightly before sealing
Let the piri piri oil sit for about a week to reach its full strength
Before filling jars with ingredients, sterilize them by placing them in a 225 degree oven for 20 minutes
