Add plantain slices and carrots; cook until tender, about 15-20 minutes.
Stir in spinach and cook until wilted, about 2-3 minutes.
Season with salt, black pepper, and cayenne pepper to taste.
Finish with lime juice and chopped cilantro before serving.
