Cut the ends off the onion, remove the outer skin layer, and slice into 1/8 inch pieces.

Place the pot on the stove and bring to a boil on maximum heat with the pot covered.

Once boiling, reduce heat to a little above medium and cook for about one hour, covered.

After one hour, move the pork pieces around to prevent sticking.

Add in half a cup of cooking wine and continue to cook for 20 minutes, covered.

Loosen the meat from the bottom of the pot and flip the pieces to brown them.

Raise the heat to medium-high and cook for about 10 minutes, covered, until most of the moisture is gone.

Add another half cup of cooking wine to deglaze the pan and mix with the meat.
