Start by making the caramel: combine 1 cup of granulated sugar and 1/3 cup of water in a saucepan over medium heat.
Cook the sugar and water mixture until it turns amber in color, being careful not to let it burn.
Once the caramel is ready, pour it into a baking pan, swirling to coat the bottom evenly.
In a blender, combine 13.5 ounces of coconut milk, 1 cup of sweetened condensed milk, and 1 cup of shredded coconut. Blend until smooth.
Add 5 large eggs and a pinch of salt to the blender and blend again until well combined.
Preheat the oven to 350°F (175°C).
Place the baking pan with caramel in a larger baking pan filled with hot water.
Pour the coconut mixture over the caramel in the baking pan.
Bake at 350°F for approximately 1 hour, checking for doneness by inserting a toothpick; it should come out clean.
After baking, let the flan cool at room temperature for a few hours before refrigerating.
To serve, run a butter knife around the edges of the flan, then invert it onto a serving plate.
