2 cups water
1 cup vinegar
2 tablespoons brown sugar
1 tablespoon mustard
2 tablespoons tamarind pulp
2 cups assorted vegetables (onion, carrot, cucumber, sweet pepper, hot pepper)
1 tablespoon thyme
optional: culantro coyote
1 tablespoon salt
1 tablespoon liquid caramel

Prepare all the vegetables by chopping them finely.

In a bowl, combine 2 cups of water and 1 cup of vinegar.

Add 2 tablespoons of brown sugar and 1 tablespoon of mustard to the mixture.

Incorporate 2 tablespoons of tamarind pulp that has been prepared and left to rest for about 3 hours to separate seeds from pulp.

Add the chopped vegetables to the mixture.

Cook the mixture over low heat until the vegetables are completely broken down, approximately 3 hours.

Add 1 tablespoon of salt to taste.

Stir in 1 tablespoon of liquid caramel for color.

Once cooked, let the sauce cool before bottling it.

Store in a 330 ml bottle, and keep some in the refrigerator and some in a cool place for fermentation.
