Once the sugar is melted and has a dark amber color, remove it from the heat and pour it into a 9 to 10 inch pie plate, swirling to coat the bottom.

In a large bowl, add 6 large eggs and whisk with a hand mixer until bubbly and frothy.

Pour in 1 can (320 grams, 11.25 ounces) of sweetened condensed coconut milk and mix well with the eggs.

Add 1 can of regular fat coconut milk to the egg and sweetened condensed milk mixture, stirring until smooth.

Add 1 tablespoon of vanilla extract and 1/8 teaspoon of salt, mixing until combined.
