Its smooth texture and sweet caramel topping make it a beloved treat, with modern variations incorporating different flavors like coffee or chocolate, appealing to diverse palates around the world.

Preheat the oven to 350°F (175°C) and place the rack in the center.
Fill a kettle with water and begin boiling it on the stove for the water bath.
In a saucepan, add 200 grams (1 cup) of granulated sugar and turn the heat to medium-high, stirring until it melts and turns golden brown, about 8-10 minutes.
Once the sugar is melted and has a dark amber color, remove it from the heat and pour it into a 9 to 10 inch pie plate, swirling to coat the bottom.
Set the pie plate with the caramel aside to cool while it hardens.
In a large bowl, add 6 large eggs and whisk with a hand mixer until bubbly and frothy.
Pour in 1 can (320 grams, 11.25 ounces) of sweetened condensed coconut milk and mix well with the eggs.
Add 1 can of regular fat coconut milk to the egg and sweetened condensed milk mixture, stirring until smooth.
Add 1 tablespoon of vanilla extract and 1/8 teaspoon of salt, mixing until combined.
If the mixture is lumpy, pour it through a sieve to catch any lumps before proceeding.
Pour the smooth mixture over the hardened caramel in the pie plate.
Place the pie plate in a larger dish and fill the outer dish with boiling water until it reaches two-thirds up the sides of the pie plate.
Cover the pie plate with foil, sealing it well to prevent water from entering.
Carefully place the dish in the oven and bake.
