Heat 1 ½ cups of sugar in a non-stick frying pan until fully melted and golden brown.

Mix 1 cup of shredded coconut flakes; 1 can of coconut milk; 1 can of coconut cream; 1 can of sweetened condensed milk; 1 teaspoon of vanilla extract; ¼ teaspoon of salt.

Stir the sugar until it dissolves, melts and turns into a golden-brown caramel syrup.

Pour the melted caramel into a 6”x 8” glass baking dish and allow to cool.

Mix coconut flakes, coconut milk, coconut cream, condensed milk, vanilla and salt with a whisk or immersion blender.

Crack 8 eggs into a bowl.

Beat the eggs until they are mixed.

Add eggs to the custard mixture and blend.

Preheat oven to 350°F (176 °C).

Pour boiling water into a baking dish to create a water bath.

Add the custard mixture to the caramel to create the flan.

Place the flan into the water bath and bake for 1 hour.

Chill the flan in the refrigerator for about 2 hours.
