Put a cooking pot on the stove over heat.

Add approximately 1/2 cup of extra virgin olive oil to the pot.

Add chopped onion, leeks, and spring onion to the pot and sauté for a couple of minutes.

Add spinach bit by bit to the pot, mixing it in.

Add dill, salt, and black pepper to the spinach mixture and mix well.

Lower the heat, cover with a lid, and let it cook for 10-15 minutes until the leeks are soft.

Remove the spinach mixture from heat and let it cool for a few minutes.

Beat 3 eggs in a bowl and add them to the feta cheese, mixing well.

Drizzle some olive oil in a non-stick baking pan and spread it around.

Lay down the first sheet of phyllo dough in the pan and brush it with olive oil, repeating this for two more sheets.

Add the spinach filling into the phyllo layers using a skimmer to avoid excess fluid.

Score the top of the pie to help it cook evenly.

Preheat the oven to 180°C (356°F).

Move the baking pan into the oven and bake for around 1 hour to 1 hour and 10 minutes, depending on your oven.
