1

Blanch a whole bunch of baby spinach in boiling water for about 1 minute until wilted.

2

Transfer the blanched spinach to a kitchen towel and wring out all the excess water until dry.

3

Heat a large skillet over medium heat and add olive oil.

4

Add finely sliced green onion to the skillet and cook for about 1 minute.

5

Add 1 clove of minced garlic to the skillet and cook for about 1 minute until fragrant.

6

Add the dry chopped spinach to the skillet and stir.

7

Add fresh dill to the spinach mixture and remove from heat to cool.

8

In a mixing bowl, whisk 1 egg until combined.

9

Add the cooled spinach mixture to the bowl with the egg and mix well.

10

Add about 1 cup of crumbled feta cheese to the filling and mix until combined.

11

Cut about 2 inches of phyllo pastry from the roll while keeping it wrapped in plastic to maintain moisture.

12

Wrap any extra phyllo in a kitchen towel to keep it moist.

13

Take 2 sheets of phyllo pastry, brush them with melted butter, and layer them on top of each other.

14

Place 1-2 teaspoons of the filling in one corner of the phyllo.

15

Fold the phyllo over the filling to create a triangle, then continue folding in triangles until you reach the end of the pastry.

16

Repeat the folding process until all filling is used, making about 32 triangles.

17

Brush the tops of the triangles with egg wash for extra crispiness and color.

18

Bake the triangles in the oven.
