Traditionally made with fresh spinach and feta, it is often served as a snack or appetizer during gatherings and celebrations. Today, spanakopita is enjoyed worldwide, with variations incorporating different greens and cheeses, making it a versatile and cherished dish.

Roll six pieces of phyllo pastry into balls and flatten them out slightly.
Melt some butter and mix it with a little bit of oil.
Brush each layer of phyllo with the butter and oil mixture, adding six layers for the bottom of the pie.
Seal the edges of the phyllo and chill in the fridge for about 30 minutes.
For the top, use two layers of phyllo and chill in the fridge as well.
Thinly slice the white part of the leek and spring onion.
In a deep fry pan, add a dash of olive oil and the sliced leek and spring onion, sweating them on medium heat for about three minutes until aromatic.
Add a large amount of spinach to the pan, cover with a lid, and let it sweat for a couple of minutes until cooked down.
If there is excess water from the spinach, drain it out to avoid a watery pie.
Let the spinach mixture cool slightly and add it to a mixing bowl along with ricotta cheese, crumbled feta cheese, and eggs, then mix well.
Roll out the chilled phyllo dough slightly larger than the baking dish (30 centimeters in diameter).
Brush the bottom of the baking dish with the butter and oil mixture and add the rolled-out pastry, pressing it down to the edges.
Add the spinach filling on top of the pastry.
Roll out the top layer of phyllo to fit the top of the dish, fold the pastry over itself, and score the top with a knife.
Brush the top with plenty of the butter mixture.
Bake in the oven for 60 minutes at 175 degrees Celsius (about 350 degrees Fahrenheit).
After baking, brush the top with more butter and slice to serve.
