Chop 1 pound of baby spinach into smaller pieces.
In a large bowl, combine chopped spinach, 1 pound of ricotta cheese, and 1 pound of crumbled feta cheese.
Add chopped scallions to the bowl.
Mix in 1 teaspoon of black pepper, 3 heaping teaspoons of dried dill, and 1/2 teaspoon of salt, adjusting salt to taste based on the feta's saltiness.
Pour in 1 cup of olive oil and mix everything together with your hands until well combined.
Whisk 4 eggs in a separate bowl and then add them to the spinach mixture, mixing with your hands again until combined.
Ensure the phyllo dough has come to room temperature by leaving it out for a few hours after taking it out of the refrigerator.
Grease a half sheet baking tray with olive oil, using about 3/4 to 1 cup of olive oil.
Layer three sheets of phyllo dough on the bottom of the tray, brushing each with olive oil.
Take two sheets of phyllo dough at a time and line the edges of the tray, brushing with olive oil as you go.
Spread the spinach filling evenly in the center of the phyllo dough.
Cover the filling with more phyllo dough, using two sheets at a time, tucking the edges under.
To create a crispy top, take one sheet of phyllo at a time, crumple it up, and layer it on top, sprinkling olive oil over each layer.
Drizzle any remaining olive oil over the top and sides of the assembled spanakopita.
Using a sharp knife, cut the spanakopita into squares or triangles, making sure to cut all the way through to ensure even cooking.
Preheat the oven to 450°F (232°C).
Once the oven is ready, reduce the temperature to 350°F (177°C) and bake for 1 hour.
After baking, let the spanakopita cool for at least 20 minutes before serving.
