Pork tacos, often made with slow-cooked, seasoned meat, are a festive favorite, showcasing the rich flavors of Mexican cuisine. Today, these tacos are enjoyed globally, especially during celebrations and gatherings, embodying the spirit of community and festivity.

Rub olive oil on the pork butt as a binder.
Coat the pork butt with fajita seasoning, covering all sides including the bottom.
Set the seasoned pork butt aside to rest.
Prepare the pan by adding chopped poblano peppers, onions, jalapenos, and cilantro.
Season the vegetables with a big pinch of salt, fresh cracked pepper, oregano, and cumin.
Squeeze the juice of two limes over the vegetables.
Place the pork butt on top of the seasoned vegetables.
Cook in the oven at 225°F for 12 hours.
After 12 hours, remove the pork and wrap it up, folding the sides in.
Return the wrapped pork to the oven for an additional 4 hours.
Prepare salsa by combining tomatillos, tomatoes, jalapeno, onion, garlic, and avocado oil in a pan.
Cook the salsa ingredients on heat until browned and caramelized.
Transfer the hot mixture to a blender, being careful to avoid explosions.
Add cilantro, oregano, salt, black pepper, chicken bouillon, and lime juice to the blender.
Blend the salsa until smooth and taste for seasoning.
For guacamole, mash ripe avocados in a bowl.
Add chopped tomatoes, onions, jalapenos, cilantro, salt, and lime juice to the avocados.
Use a potato masher to combine the ingredients until smooth.
Set the guacamole aside in a bowl.
Once the pork is done cooking, remove it from the oven and shred it.
Pull off the fat cap and remove the shoulder blade bone from the pork.
Chop the meat into smaller pieces and season with salt, fajita seasoning, and lime juice.
Mix the shredded pork to incorporate the seasonings.
Crisp up some tortillas and place them on a plate.
Add a layer of guacamole to the tortillas, followed by the shredded pork.
Top with wajaca cheese and a dollop of salsa.
Finish with a sprinkle of queso cotija and a squeeze of lime juice.
Taste the tacos to ensure they are flavorful.
